It would be too easy to write a pun about how good this drink is, but it really is great. This is the Raspberry Bees Knees.
The Raspberry Bees Knees is a Mocktail version of a famous prohibition-era cocktail. The drink was invented by Austrian born Bartender Frank Meier who was the first head Bartender at the Ritz in Paris 1912 when its Cafe Parisian opened its doors. The typical Bees Knees will make use of Gin, Honey and Lemon Juice , where as this version removes the Gin and replaces it with two kinds of water and Raspberries for a base flavour. Its name comes from the prohibition-era slang term for “the best”.
This Mocktail version of the classic provides a very light carbonated flavour with a hint of sour that makes for very easy drinking. The cool thing about this Mocktail is you can swap out the Raspberry for your favourite fruit to try out other flavourful variations, it is completely in your hands.

Ingredients
1 oz. (30ml) Filtered Water
½ oz. (15ml) Lemon Juice
½ oz. (15ml) Honey
Soda Water (To top)
Raspberries
Garnish : Raspberry on a Skewer
Preparation
Add all ingredients apart from Soda water into a shaker and muddle with two Raspberries.
Add ice to shaker.
Shake well for 10 – 15 seconds.
Pour and strain into glass.
Top with Soda Water
Garnish with a Raspberry on a skewer.
