A close rival to the Margarita for most popular Tequila cocktail. This is the Paloma.

In the world of Tequila cocktails the Margarita is often considered the king, but some would argue that the Paloma is a close contender if not the superior drink. Some believe its name originates from the Spanish for 'Dove' but others suspect the name comes from a derivation of the word pomelo, which is the Spanish for "grapefruit".
One of the great things about the Paloma is that it is a simple 3/4 ingredient cocktail that requires little preparation. Its blend of Lime Juice and Pink Grapefruit Soda off the perfect flavourful paring for a good Tequila. Blanco is usually the go to choice, but a good Reposado can also provide a bit extra. An Anejo Tequila may overpower the drink with its oak flavour and take away from the sweet crispness.
If you like Tequila but want to change things up from the standard Margarita, the Paloma is a great place to start. One of Mexico's best cocktails without a doubt.
Here is how it is made.
Paloma Ingredients
1 1/2 oz. (45 ml) Tequila (Blanco or Reposado)
1/4 oz. (7.5 ml) Lime Juice
A pinch of salt
3 1/2 oz. (100 ml) Pink Grapefruit Soda
Garnish : Grapefruit Slice
Preparation
Add Tequila and Lime Juice to a long glass.
Add ice and then the salt and Grapefruit Soda.
Stir gently.
Garnish with a Grapefruit slice.
