Pacific Sunshine

Very few sights are better than the sun shinning on the ocean as you drive by it on the coast. Well imagine having that amazing view contained with a glass and being able to drink it. This is the Pacific Sunshine.




One thing I have discovered since experimenting with drinks making is that Tequila and sour go hand in hand. I cannot put my finger on it, but they seem to both balance each other out so well. The Pacific Sunshine is a perfect example of a drink that follows the 2:1:1 ratio rule of drinks making. That is that most cocktails are made of two parts (ounces) spirits one part sweet and one-part sour . What this does is balances your spirits well with your acids and sugars in your drink. I will hopefully be doing articles in the future talking more about the theory side of drinks making to help you understand these concepts more.

I have drunk similar drinks to the Pacific Sunshine in the past, one more notably called “the big blue” which also had a prominent sour taste to it (it sorts of tasted like a sour blue Jolly Rancher). This flavour in both drinks no doubt derives from the use of sour mix which is a useful ingredient to have made ready at home from fresh as it comes up in many recipes. Ingredients

 
  • 2 oz (60ml) Tequila

  • 1 oz (30ml) blue Curacao

  • 1 oz (30ml) Sour Mix

  • 1 Dash Angostura Bitters

Preparation

 
  1. Add a few ice cubes into an old-fashioned low-ball glass.

  2. Add all the ingredients into an ice filled shaker.

  3. Shake for 10-15 seconds.

  4. Strain and pour into your glass.




Further Information

 

When it comes to the bitters in this drink, you can use any of your preference. I would suggest a citrus flavoured bitter such as orange or lemon. These flavours match the sour flavour and tone of the drink so it works better than a normal aromatic bitter would.

I have not included a garnish in the photo, but you might want to garnish this drink with a lime or lemon slice. You could also rim the edge of your glass with the citrus juices of your garnish to intensify the citrus taste of the Pacific Sunshine.
