Lime Rickey

A delightfully sour mocktail based of a classic cocktail. This is the Lime Rickey.


The Lime Rickey is based of the classic cocktail the “Rickey” a highball drink that is thought to date back to the 1880’s in Washington D.C. Originally this drink was made with Rye or bourbon Whiskey but in more modern times this has been swapped out for Gin. From this has stemmed the virgin/non-alcoholic variant which was widely served at soda fountains on the East Coast of the U.S.


This mocktail version is very simple but has a strong prominent flavour that has made it a popular choice for many people. Its main selling point is its intense sour citrus flavour from the Lime juice, this toned down slightly to stop it being too overbearing by sugar syrup and a carbonated water of some kind (usually seltzer or Soda Water). Throw this all together and you have a solid high ball drink/cocktail that packs a punch flavour wise.


It is easy to see why it is a popular mocktail and it has many close relatives including the world famous Mojito which basically is a Lime Rickey with mint leave and White Rum. So, try it out and see how well you rate it. This is how it is made.





Ingredients

 
  • 2 oz. (60ml) Lime Juice

  • 1 oz. (30ml) Simple Syrup

  • 3 oz. (90ml) Club Soda or Seltzer


Garnish : Lime Wedges







Preparation

 
  1. Mix together the Lime Juice and Simple Syrup in a mixing glass or container.

  2. Pour the mixture into a glass over ice.

  3. Top with Soda Water or Seltzer .

  4. Garnish with Lime Wedges.
