A lot of old classic cocktails come from Prohibition era America, but the Clover Club even pre dates this. Named after the Philadelphian men’s club of the same name , this cocktail can be tracked as far back as 1896. Robert Hess claimed it was a drink often enjoyed by Captains of industry at the men’s club who were members there.
Hess also claimed that the drink was a popular choice with Prohibition gentleman who would have fit in with those of the club and was a Distinguished patron of the oak-panelled lounge. However, by the time he got around to writing about the drink in a book, it’s popularity had fallen due to the use of raw Egg white in it which many chose to avoid partly due to the complexity of the drinks preparation.
The cocktail itself has a spectacular light sweet Raspberry flavour to it, which many people could easily fall in love with. Contrary to the concerns of the past, the Egg white in it creates a amazing smooth frothy texture on the top of the drink which combined with its flavour makes for an outstanding drinking experience. More modern versions of the Clover Club replace the Raspberry Syrup with Grenadine or Red Currant Syrup.
It’s another absolute classic that may have lost its popularity over time, but more and more people are now discovering it again. Who knows, maybe the Clover Club will be a staple drink in local bars again soon.
Here is how it is made.
Ingredients
1 ½ oz. (45ml) Gin
½ oz. (15ml) Lemon juice
½ oz. (15ml) Raspberry Syrup
1 Egg white
Garnish : Raspberries
Preparation
Add ingredients into a shaker with one cube of ice and dry shake well for over a minute.
Add ice to a shaker.
Shake well again till chilled.
Pour and strain into a Coupe glass.
Garnish with a few Raspberries.
