Aperol is modern marvel on the cocktail menu, despite being around since 1919. Most people will be familiar with a classic Aperol Spritz, which is a common cocktail at most bars these days. But there are many other great recipes to make use of this bitter orange aperitif and this one introduces it to the Sour Cocktail family with delicsous results.
The citrusy tart nature of Aperol fits in so well with the traditional build of a Sour cocktail, pairning with Lemon Juice, Simple Syrup , Aquafaba and a good London Dry Gin for some extra dry herbal tones. The trick with these Sour Cocktail recipes is to shake for longer and harder to help the Aquafaba or Egg White (depending on your preference) emulsify and create a nice thick layer of foam on top , that creates the smooth sipping texture associated with these kinds of drinks.

Here is how it is made.
Aperol Sour Ingredients
1 1/2 oz. (50 ml) Aperol
1 oz. (30 ml) London Dry Gin
1 oz. (30 ml) Lemon Juice
3/4 oz. (20 ml) Simple Syrup
1 oz. (30 ml) Aquafaba or 1 Egg White
Garnish : Lemon Swirl
Preparation
Add all ingredients into a shaker without ice.
Shake well and hard for 30 - 40 seconds.
Add ice and shake again till chilled.
Pour and strain into Coupe glass.
Garnish with a Lemon Swirl.
